Strawberry and Granola Breakfast Pops
Are you ready to make your mornings easier than ever? Say hello to our delicious Strawberry and Granola Breakfast Pops! This recipe is designed to kickstart your day with a yummy twist, everything you and your baby need in a delicious, handy pop. They are really safe for little ones to eat and are packed full of protein, fruit and yummy oats and seeds. Make a double batch and start stocking up the freezer for those busy mornings!
Makes 8 Pops / Prep time 12 mins
Ingredients
White Layer
- 1 ripe banana
- 2 heaped dessert spoons Greek yogurt
Pink Layer
- 6 strawberries
- 2 heaped dessert spoons Greek yogurt
- Zest lemon
Granola and Seed layer
- 4 tbsp berry granola
- 1 tbsp pumpkin seeds
- 2 tbsp sunflower seeds
8 ice pop sticks
How to make:
- Start by making the white yogurt layer. Mash the banana, mix with yogurt and spoon into either an ice pop mould or a large silicone tray filling up about 1/3 way. Tap gently so that it evenly spreads.
- Make the pink layer by mashing the strawberries, mix with Greek yogurt and lemon zest, then spoon in 1/3 way with the pink yogurt.
- To make the crunch layer, add the granola and seeds to a pestle and mortar and grind until fine. Add a teaspoon to the top of the yogurt, then using the back of a teaspoon press down so that it is all in the yogurt with just a little showing at the ends.
- Place an ice pop stick into each pop, then freeze for 3-4 hours until set.
- To serve, remove from the mould and leave for about 10 mins at room temperature so they soften slightly.
Airfryer Sweet Potato and Carrot Baby Bites
Your little ones are going to love these sweet potato and carrot baby bites. So easy to make and perfect for the freezer if you want to build up a stash of handy lunches or snacks to make life easy. I used oat flour, but you can use regular flour.
For egg free, swap out the egg for a chia egg – 1 tbsp of ground chia with 3tbs warm water.
Ingredients
- 180g (3/4 cup) mashed sweet potato
- 180g (3/4 cup) mashed carrot
- 1 tsp finely chopped rosemary
- 1 egg
- 3 tbsp Greek yogurt
- 1 tsp garlic granules
- 90g (1/2 cup) oat flour (plus a little extra for dusting the plate)
- 3 tbsp olive oil
*Note – if you don’t have an air fryer, preheat oven to 180ºC.
How to make:
Add all of the ingredients to a large mixing bowl and stir well until fully combined.
Sprinkle a little extra oat flour on a plate, then divide the mixture using a tablespoon.
Place into the air fryer and cook for 12 minutes at 180ºC until golden and cooked through. Or place on a baking tray lined with parchment and bake for 20-25 minutes until golden.
Serve with a sauce of your choice and a little sprinkle of fresh parsley.
